The aging of the wine is an essential part of the process which defines the wines structure and quality but also its’ cellaring potential. Our Médievale and Selection wines are matured exclusively in vats.
Our Tradition wine is aged in oak barrels for 12 months. Carefully managed, the ageing process brings strength and character to the wine. The barrels are renewed regularly at our coopers to ensure that we produce the highest quality wine.
Our Chenin grapes are transferred to 225 litre barrels as soon as they start fermenting. They are then aged on lees, producing a superior white Chinon; medium bodied with a delicious bouquet of pineapple, peach or honey.
