Vinification method : As soon as it leaves the winepress the clarified must is transferred directly into oak barrels. The fermentation takes place in a temperature controlled environment on fine lees which gives the wine its mellow woodiness. The lees are stirred (kept in suspension) every week to give body and complexity to the wine.
Wine and food: This famous white, which is both dry and fruity, surprises by its subtle white fruit aromas and seductive hints of honey and acacia giving it an elegant finish. It is perfect for an aperitif and can be enjoyed with fresh water fish and cooked and cured meats.
