Vinification method: A meticulous selection of the finest, ripest grapes of the low yield “old” vines and a long maceration period allows for the best extraction of tannins that are exceptionally concentrated and intense. The wine is then left to mature in tanks for several months to refine and develop the aromas. This wine is bottled in limited amounts, a marriage of two grape varieties giving an exquisite, full bodied wine.
Wine and food: This wine has a deep intense robe with an elegant gleam. Blackcurrant and plum dominate; pepper and spices add an aromatic harmony giving a structured palate of well-balanced silky tannins. This wine is excellent served with wild game, all types of stewed dishes and local cheese.
